Ingredients

  • 1 pack of bacon in slices from Morliny
  • 6–8 pcs of large toasted bread or French brioche
  • 100 g (3.5 oz) of Gruyere or cheddar cheese
  • 4 eggs
  • Salt and pepper

  • Béchamel sauce:
  • 2 tablespoons of flour
  • Salt and pepper
  • Half a litre of milk
  • 1.5 tablespoons of butter
  • A pinch of nutmeg to taste

Preparation

Step 1

Place the bacon on baking paper and bake in the oven for 10–15 minutes in 180 °C (356 °F), until it turns slightly brown. You can also fry it in a frying pan or in the microwave.

Step 2

Use a saucepan to heat the butter. Add flour and mix thoroughly. Heat it up while stirring for about 1 minute. Remove the pot from the heat source and then add milk, stirring constantly with the whisk. Put it back on the stove and heat it slowly, stirring occasionally, until it thickens. Finally, season with nutmeg, salt, and pepper.

Step 3

Grate the cheese. Spread a little béchamel on 4 slices of bread. Arrange the slices of bacon on top and sprinkle with half the cheese. Cover the toast with the remaining bread and Béchamel sauce it slightly. Sprinkle each toast with the Béchamel sauce and sprinkle with the remaining cheese. Put the prepared toasts in the oven preheated to 200 °C (392 °F) for about 10 minutes, or until the cheese is melted and browned.

Step 4

Fry the eggs in a separate pan. Place one egg on each toast. Season with salt and pepper.
