Ingredients

  • A pack of white sausage from Morliny (about 0.5 kg / 1.1 lb)
  • 3–4 potatoes
  • 1 large onion (or 2 small ones)
  • 6 eggs
  • 1–2 carrots
  • 3–4 cloves of garlic
  • 1 bay leaf
  • 4 pieces of allspice
  • 2 litres of broth
  • 500 ml of sourdough per soup
  • 1–2 teaspoons of dried marjoram
  • Salt and pepper to taste
  • Frying oil
  • Cream to whiten the soup (optional)

Preparation

Step 1

Slice the sausage. Julienne the onion. Peel and dice the potatoes and the carrot. Chop the garlic.

Step 2

Heat the olive oil in a large pot. Put in the sausage and fry until it’s brown. After this time, add the onion. When the onion is soft, add the sausage and garlic, and fry it all for another minute.

Step 3

Pour the broth into the pot and add the potatoes. Season with marjoram, allspice, bay leaf, salt, and pepper. Cook everything until potatoes are almost completely soft for about 10 minutes. In the meantime, hard-boil the eggs.

Step 4

When the potatoes are ready, add the sourdough, and mix it thoroughly. Cook it all on low power for about 15 minutes.

Step 5

You can optionally whiten the sour soup with a little sweet cream. Serve the soup with a hard-boiled egg.
