Ingredients

  • Half a pack of ham sausage from Morliny (2–3 sausages)
  • 3 medium-sized coloured peppers
  • 1 medium-sized courgette
  • 1 onion
  • 1.5 cups of white rice
  • 3 cloves of garlic
  • 500 ml of tomato passata
  • Half a teaspoon of powdered chilli pepper
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • 100 g (3.5 oz) of hard cheese
  • Salt and pepper to taste
  • A bunch of chopped parsley 

Preparation

Step 1

Boil the rice al dente. Dice the sausage and onion. Chop the garlic. Cut the courgette in half lengthwise, and then remove the pulp with a spoon. Chop the pulp. Peel off the tops of the pepper. Hollow the peppers and chop the cut pieces. Grate the cheese.

Step 2

Fry the onion and garlic in a pan. Add the sausage, fry it.Put the chopped vegetables into a large bowl. Add cooked rice and fried onion with garlic and sausage. Add the tomato passata and season with bell pepper, basil, oregano, salt, and pepper. Add the chopped parsley and mix it all thoroughly.

Step 3

Stuff the previously hollowed vegetables (pepper and courgette) with the filling. Sprinkle everything with grated cheese and put in the oven preheated to 180 °C (356 °F). Bake for about 30 minutes. Serve sprinkled with parsley.
