Salad with sausage, pickled cucumbers, and fried lemon

Fried lemon? Chicory? Who’s heard of such things? Well, we have, and we put in this delicious recipe!

Sausage salad — perfectly cut.

No, we’re not pulling your sausage! Something really delicious is up. With Silesian sausage, juicy and crispy, you will fry a dish that will disappear from the plate in no time, and those who do not make it for refills will have sour faces. And not from the fried lemon.

Salad with sausage, rocket, and chicory — holy molly! And the onion has also landed! Furthermore, you have honey and olive oil with balsamic vinegar — take it and pour it well. All these flavors will make your head spin. The sausage salad speaks for itself — it has a composition that is unforgettable.

Ingredients

  • Half a pack of Silesian sausage from Morliny (2–3 sausages)
  • 200 g (7 oz) of rocket
  • 10–12 gherkins in vinegar
  • 3–4 pieces of chicory
  • 2 tablespoons of balsamic vinegar
  • 2 tablespoons of olive oil
  • 1 teaspoon of honey
  • Frying oil
  • 1 tablespoon of butter
  • 2 lemons
  • 1 red onion
  • Salt and pepper to taste

Preparation

Step 1

Slice the sausage. Cut the chicory in half. Cut the gherkins in halves or slice them. Fry the sausage in a pan with a little olive oil until it is lightly golden. Take the sausage out of the pan — leaving the fat. Put the cut chicory on the pan on the fat of the sausage, and fry for 3–5 minutes, until caramelised. Then add the butter, rotate the chicory, and fry for a while. Season it with salt and pepper. Fry lemon in the same pan.

Step 2

In a separate bowl, combine honey, olive oil, and balsamic vinegar. Add the juice of 2 halves of fried lemons, and season with salt and pepper. Julienne the onion.

Step 3

Place 2 pieces of chicory on a plate. Add the fried sausage, rocket, and chopped onion. Pour everything over with balsamic vinegar dressing. Serve with fried lemon.
