How do we call an exceptionally tasty tart? The tartest!
Grease a casserole dish with oil. Cut the puff pastry into same-width strips to the height of the dish. Cut the pepper into strips. Julienne the onion. Finely slice the sausage.
On a stretched strip of puff pastry, alternate a slice of sausage, onion, coloured pepper, and a leaf of spinach. Roll the pastry strip with the ingredients. Next, prepare another strip in the same way, and wrap it around the previously prepared roll. Add the pastry strips with the ingredients in sequence, make pastry spirals, and place the snail tart in the baking tin. Pour over the olive oil.
Bake the finished tart at 210 °C (410 °F) for about 30–40 minutes, until the pastry is golden.
