Couscous is a gourmet’s heaven! Middle Eastern hodgepodge meets sausage from Morliny… What will be the outcome?
Put the couscous in a bowl. Add 1 tablespoon of olive oil and chopped garlic. Season with salt and pepper, and mix thoroughly. Pour boiling water over the couscous, so it is covered by about 0.5–1 cm (0.2–0.4 in) of water. Cover the bowl with foil, and set aside for 15 minutes.
Dice the cucumber and tomato finely. Slice the red onion. Thoroughly chop the parsley and mint. In a separate bowl, mix the lemon juice with 3 tablespoons of olive oil, salt, and pepper. Peel the pomegranate.
Stir the boiled couscous with a fork. Add the chopped herbs and mix. On top of couscous, put layers of cucumber, tomato, sausage, pomegranate seeds, and onion. Sprinkle everything with olive oil, lemon juice, and herbs.
