Italian bean, kale, and sausage soup

Italy is not just pizza — you will find a recipe for sausage soup!


  • 2 litres of broth
  • 1 pack of chicken sausages from Morliny
  • 200 g (7 oz) of kale
  • 1 can of cannellini beans
  • 1 carrot
  • 1 onion
  • 1 potato (optional)
  • A handful of fresh basil
  • 2–3 cloves of garlic, or 1 teaspoon of granulated one
  • Half a teaspoon of dried oregano
  • 1 can of tomatoes
  • 1 tablespoon of tomato paste
  • Frying oil


Step 1

Peel and dice the vegetables. Strain the beans. Slice the sausage. Chop the onion and garlic. Cut the kale into smaller pieces.

Step 2

Use a large pot to heat the olive oil, and put the sausage with the onion in it. Fry the ingredients until they start to brown. Then add vegetables with garlic and fry for another 2 minutes. After this time, pour in the broth, and bring it to a boil. When the vegetables are soft, add kale, tomatoes, and paste, then bring it all to a boil again. Add the beans, herbs, and spices, and cook it all for about 10 minutes.

Step 3

Finally, season with salt and pepper.
