Use a frying pan to heat the olive oil and fry the sausage until golden brown. When the sausage is ready, put it aside and strain any excess fat. Fry the potatoes on the remaining fat in the pan. When the potatoes are browned, pull them out of the pan as well.
Use the pan after frying the sausage and potatoes to add the onion and fry it until it is soft and browned. Add garlic and cook for 1 minute more. Pour all the tomatoes and season them with fresh thyme, salt, and pepper. Place the fried potatoes on one side and the sausage on the other side of the pan. Put the pan in the oven preheated to 180 °C (356 °F) oven and bake for about 30 minutes, until the potatoes are soft.
