Slice the sausage. Dice the onion and chop the garlic. Coarsely dice pepper, courgette, and eggplant. Cut the button mushrooms in quarters.
Use a medium pot to heat the olive oil and fry the sausage until golden. Then add the onion and button mushrooms, and fry until the onion is tender. Add the remaining vegetables and pour everything over with the broth and tomatoes. Add the tomato paste and spices.
Bring it to the boil and then stew it on medium power for about 20–30 minutes, stirring occasionally. Finally, season the dish with salt and pepper.
