We promise that you have not eaten such a pizza yet! It will appeal to you on a deeper level — just get a cast iron skillet.
Pour water into a large bowl and add the yeast. Add 1 cup of flour and mix thoroughly. Put everything aside for 10–15 minutes. After this time, add the salt, remaining flour, and olive oil, and mix thoroughly until you obtain a smooth and elastic dough. Cover the dough in the bowl and set aside to rise in a warm place for at least 30 minutes.
Mix the ingredients for the sauce together.
Slice the sausage. Slice the button mushrooms. Julienne the onion. Use a frying pan to fry all the ingredients together until they are just golden. You can skip this step and use raw ingredients.
Grease the cast iron skillet with olive oil. Sprinkle the risen dough with a large amount of flour, depending on the size of the skillet, use the whole skillet or divide it in half. Shape the dough into a circle — best done with your hands, but you can also use a rolling pin.
Put the dough on the frying skillet so that the edges are highly covered with the dough. Brush the bottom with tomato sauce and sprinkle with grated cheese. Then add the fried ingredients. Sprinkle them also with a little cheese.
Put the pizzas in the oven preheated to 220–230 °C (428–446 °F) and bake for about 20–30 minutes.
