Roasted sausage from Morliny with green peas puree and mint

Can you conjure up delicate flavours with sausage? But of course — we will just need a little will and imagination!


  • Half a pack of white sausage from Morliny (2–3 sausages)
  • 1 pack of frozen green peas
  • A few fresh mint leaves
  • 1 onion
  • 1 tablespoon of butter
  • Salt and pepper 


Step 1

Make cuts on the sausage on both sides as for grilling. Julienne the onion and put it into a baking dish. Put the sausage on the onion and put in the oven preheated to 190°C (374 °F) for about 15–20 minutes, until it browns.

Step 2

Pour the peas into a pot. Pour water over them so that they are only slightly covered. Season with salt and cook until soft. When the peas are soft, strain them. Add the chopped mint and butter, then blend them until you get the consistency of a puree. Finally, season it with salt and pepper. If the puree is too thick, you can add a little sweet cream to thin it.

Step 3

Serve the roasted sausage with green pea puree and roasted onion.
