Stuffed and baked potato halves with vegetables and mozzarella

Potatoes can be made in a million delicious ways. Here is number 1,000,001 ⁠— with bacon, vegetables, and mozzarella!

Ingredients

  • 8 medium size potatoes
  • 1 pack of cube bacon from Morliny
  • 1 cup of grated mozzarella cheese
  • 1 cup of orange cheddar or mimolette cheese
  • One third of peppers from each colour
  • 1 onion
  • 2–3 cloves of garlic
  • Chives / parsley
  • 3 tablespoons of sour cream

Preparation

Step 1

Thoroughly scrub and wash the potatoes. Transfer to them a casserole and cover. Bake for about 45–60 minutes (depending on the size of the potatoes). After this time, set them aside to cool down. When they have cooled down, cut each in half and hollow thoroughly.

Step 2

Dice the pepper. Finely chop the onion and garlic. Chop the chives.

Step 3

Use a frying pan to fry the bacon until it starts to brown. Add the remaining vegetables and cook it all for about 5 minutes, stirring occasionally. Finally, add the potato leftovers, half a cheese, cream, chopped chives, and season with salt and pepper.

Step 4

Stuff the hollow potatoes with the prepared filling. Finally, sprinkle it all with cheese. Bake in the oven preheated to 200 °C (392 °F) for about 20 minutes.
