Béchamel sauce: use a separate pot to melt the butter and mix it with the flour. Set from the stove and add milk while stirring. Put on the stove until it boils and thickens. Finally, season with salt, pepper, and nutmeg. Set the pot off the stove and add the grated cheese while stirring thoroughly. Set aside to let the cheese melt.
Dice the sausage and chop the chives. Pour the pasta, sausage, and chives into the pot with the sauce. Season with freshly ground pepper and mix thoroughly. Put the mass into a pan smeared with fat and sprinkled with breadcrumbs.
Bake the dish in an oven preheated to 180 °C (356 °F) for about 30–40 minutes, until the pasta is soft.
