Dough:
Pour water into a large bowl and add the yeast. Add 1 cup of flour and mix thoroughly. Put everything aside for 10–15 minutes. After this time, add the salt, remaining flour, and olive oil, and mix thoroughly until you obtain a smooth and elastic dough. Cover the dough in the bowl and set aside to rise in a warm place for at least 30 minutes.
Mix the ingredients for tomato sauce in a small bowl: puree, oregano, and garlic. Season with salt, pepper, and a little sugar. Cut the peppers in strips. Slice the button mushrooms, onion, and sausage.
Put the risen dough onto the table top. If you want to make 2 smaller pizzas, divide the dough into 2 parts. Roll out the dough to a thickness of about 0.5 cm (0.2 in) and place it on a baking tray. Brush the top with tomato sauce and sprinkle with grated cheese. On top, arrange the ingredients with the sausage. Bake the pizza in the oven preheated to 210 °C (410 °F) with the lower heater setting. Place the dough as low as possible in the oven. Bake for about 15 minutes.
