In recognition of its merits, this soup should have monuments in every town. We are proud to present pea soup with sausage!
Dice the sausage. Peel and cut the potatoes into 1 cm (0.4 in) cubes. Chop the carrots and the onion.
Use a large pot to heat the olive oil, and fry the sausage with the onion on it. When they turn brown, add the carrots and potatoes. Fry all of it for about 3 minutes, then pour in the broth.
Add peas and spices. Bring it to the boil, then simmer it for about 30–40 minutes covered, until the potatoes are cooked and the peas are soft.
Season the soup with salt, pepper, and chopped parsley.
