Break the eggs into a bowl and mix thoroughly. Season with salt and pepper. Preheat the pan on medium power. Add butter and eggs. Fry it all for about 1–2 minutes, stirring constantly. Finally, season with salt and pepper.
Cut the sausage in half, and then cut each piece back in half but lengthwise. Fry the sausage on both sides in a pan.
Put scrambled eggs on the tortillas and the fried sausage on top. Roll it all in a tight roll-up. Serve with chopped chives.
