Everyone makes bigos in their own way, so we would like to add our own proposal!
Slice the sausage. Julienne the onion, chop the garlic. Slice the leek and courgette.
Heat the olive oil in a pot and add the onion and sausage. Fry until the onion is soft and the sausage is golden. Add the remaining vegetables and fry for about 2 minutes. Add tomatoes, tomato paste, and spices. Stew the bigos for about 20 minutes, covered, stirring occasionally. Finally, season it with salt and pepper.
