Pancakes can be made from something else than potato — this is the tastiest evidence in this case.
Finely dice the sausage. Chop the onion. Use a frying pan to fry the sausage and onion until lightly golden. Wash the courgette and grate it coarsely. Add the sausage with onion, flour, eggs, salt, and pepper to the courgette. Mix it all thoroughly.
Heat the olive oil in a frying pan on medium power, and fry the pancakes for about 2 minutes from each side.
Serve the pancakes with the garlic yogurt sauce.
