Courgette stuffed with deliciousness to the brim — try it yourself! Simply divine!
Dice the sausage. Chop the onion. Halve the courgette and, using a small spoon, scoop out its pulp, taking care not to damage the skin and edges of the vegetable. Chop the inside of the courgette with a knife. Dice the pepper. Chop the spring onion.
Heat the olive oil in a frying pan and fry the sausage and onion. When they turn brown, add the remaining vegetables and fry it all for about 5 minutes. After this time, add the spices, half of the chopped spring onion, and half of the grated cheese, and mix everything thoroughly.
Sprinkle the hollow courgette with olive oil, and season it with salt and pepper. Fill the courgette with the stuffing, so that a little is sticking out of the courgette. Sprinkle everything with cheese. Bake the vegetables in the oven preheated to 180 °C (356 °F) for about 45 minutes.
When baked, sprinkle with spring onion.
