The asparagus season is our favourite season. And asparagus with bacon and tomatoes is our favourite dish. So let’s hurry and eat asparagus!
Clean the asparagus from inedible husk or peel it. Break the woody tips. Wrap the asparagus in a slice of bacon and place on a baking tray. Put in the oven preheated to 200 °C (392 °F) for about 10–15 minutes, until the bacon is lightly browned. Instead of using the oven, you can also fry the asparagus in a pan.
Finely dice the tomatoes. Chop the red onion together with the garlic and add to the tomatoes. Add the chopped parsley, olive oil, and lemon juice. Season with salt and pepper, and mix it all thoroughly.
Serve the asparagus with the tomato salsa.
