Viva la Mexico! The wrap got rolled, but it did not regret it. It used to be thin as a pancake, now it is thickly stuffed with chicken breast sausage that was lost in action now started being on a roll. Immediately our flatbread started looking like a foreigner — now, it’s called tortilla, and people devour it, not only with their eyes.
Tortilla with sausage is a fiesta on a plate. Full of flavours and aromas, colourful like Frida, strong and temperamental like Diego. The chicken sausage inside resides in such good company. But some say that it is the chicken sausage that leads the way among the flavours of stuffing, melting in the mouth. Caramba! And how this dish smells! Amazing!
Cut the sausage in strips. Dice the onion. Dice the pepper and the tomato. Grate the cheese.
Put the sausage on a pan and fry it until it turns golden brown. Add the onion and fry until it’s soft. Transfer the sausage and onion to a bowl. Add pepper, tomato, ketchup, cumin, and grated cheddar cheese. You can also add chopped coriander. Mix it all thoroughly.
Cut tortillas in halves. Put the stuffing on the half of the tortilla, then roll it up into a cone. Place the prepared tortillas on a baking tray and sprinkle with cheese. Bake it in 180 °C (356 °F) for about 15 minutes.
