Morliny-style sausage omelette (tortilla de patatas)

Perfect dish to make before siesta — a Spanish omelette may take a while to cook, but it makes up for the time with its incredible taste. And our Texas sausage with chilli adds character to the whole dish!

Ingredients

  • Half a pack of Texas sausage from Morliny (2–3 sausages)
  • 1 onion
  • 5–6 boiled potatoes
  • 8 eggs
  • Salt and pepper to taste
  • 1 cup of canned peas
  • 2 tablespoons of sour cream
  • Frying oil
  • Sour cream for decoration.

Preparation

Step 1

Julienne the onion and fry it in a pan until it is lightly browned. Remove it from the pan to the side. Slice the potatoes and fry them from both sides in olive oil until lightly browned. Remove them from the pan. Slice the sausage in half and fry it in the same pan.

Step 2

Break the eggs into a large bowl. Add sour cream, salt, and pepper. Mix everything thoroughly with a fork or whisk. Pour the fried onion, potatoes, sausage, and pickled peas into the mixture. Season with salt and pepper. You can cook it all as one large omelette or divide it into two parts.

Step 3

Preheat the frying pan with the oil. Pour in the egg, add the potatoes and sausage. Fry on medium power for about 5–8 minutes, until the eggs are about half-easy. Carefully slide this omelette onto a plate, then turn the raw side over to the pan, and fry for another 5 minutes. Serve tortillas with sour cream.
