Potato salad with sausage, rosemary, red onion, and peas

O my rosemary, what big sausage you have! A light and simple salad that will appeal to everyone.

A dish of sausage and potatoes — not only for boys. Damn it! Our Głogowska sausage makes everyone go insane. This dish guarantees a lot of sausage, potato cubes, and a little bit of peas. When Głogowska is golden, no one can resist it.

And how our sausage and potato dish develops beautifully with the taste of rosemary, dill, and chives. These are all good herbs and they like each other’s company. Dressing as smooth as velvet, appreciated even by those who are not fans. Prepare yourself for a feast!

Ingredients

  • Half a pack of Głogowska sausage from Morliny (one, long sausage)
  • 500 g (1.1 lb) of small potatoes
  • 1 red onion
  • 3 cloves of garlic
  • 1 can of peas
  • A sprig of fresh rosemary
  • A bunch of chopped dill
  • A bunch of chopped chives
  • 1 cup of mayonnaise
  • 1 tablespoon of lemon juice 

Preparation

Step 1

Wash the potatoes. Cook them until soft. After cooking, cool them down, and cut in halves or quarters. Slice the sausage. Julienne the red onion. Strain the peas from the pickle. Chop the dill and chives.

Step 2

Fry the sausage in a pan until it is slightly browned, then remove the excess fat with a paper towel.

Step 3

Put mayonnaise in a tall dish. Add chopped garlic, rosemary leaves, half of the chopped herbs, and lemon juice. Blend everything into a smooth sauce. Finally, season it with salt and pepper. Use a large bowl to mix potatoes with the onion, sausage, green peas, and sauce. Sprinkle with the rest of the herbs.
