Solyanka — Settlers’ Soup

Silesian sausage vs flavours from the east — who will win this tasty duel? Can they come to an agreement together? You will find out after an hour of cooking!

Ingredients

  • Half a pack of Silesian sausages from Morliny
  • 1 carrot
  • 4 pickled cucumbers
  • A handful of black olives (or black and green olives)
  • 4 potatoes
  • 2 litres of broth
  • 1 onion
  • 200 g (7 oz) of button mushrooms
  • A handful of parsley
  • 1 bay leaf
  • 3 balls of allspice
  • 1 tablespoon of tomato paste
  • Half a teaspoon of sugar
  • Salt and pepper to taste

Preparation

Step 1

Slice the sausage. Slice the carrot. Dice the potatoes. Chop the olives and cucumbers. Slice the button mushrooms.

Step 2

Use a large pot to fry the sausage in olive oil until golden brown. Add the carrots, mushrooms, and onions. Fry it all for about 3 minutes.

Step 3

Add the potatoes, broth, and spices. Bring everything to the boil, then cover and cook until the potatoes are soft for about 15–20 minutes. Add the tomato paste, olives, and cucumbers, and cook everything for another 15–20 minutes.

Step 4

After this time, add the spices and chopped parsley. Finally, season the soup with salt and pepper.
